COOLE SWAN CLEMENTINE ICE CREAM

Ingredients

150ml Coole Swan

10 Clementine’s

Juice of 2 Lemons

1 can of Condensed Milk

800ml Double Cream

 

Method

Finely grate the zest of 6 Clementine’s and set aside.

Juice all of the Clementine and mix this with the lemon juice.

Place this juice in a pan and reduce gently for 30 minutes until approx 150ml of liquid remains. Remove and cool.

Put the condensed milk, Coole Swan, cream, clementine zest and reduction into a mixing bowl and beat until thick.

Spoon this into a chilled container with lid and freeze over night until firm.

A really nice way to serve the ice cream is to scoop a ball into a frozen Clementine skin/peel and sprinkle with chocolate.
